“Terre di Puglia” is a testament to the Rubini Family, owners of a 4 hectares olive grove donated to their ancestors by a feudatory (Countess Siciliano) in the middle ages.
Since then, generations of Rubinis have been lovingly growing olives and handing down the grove and the knowledge to their successors. This olive oil exclusively produced for Nonna’s is a family matter rooted in tradition, history and pure passion for the land and its produce.
This year Mimmo and his family were helped by some of our customers in picking the olives and following all the steps of making Terre di Puglia.
Sveglia! at 7am for the traditional breakfast with the local pickers at the caffe’ before dedicating the day to the harvest using both traditional “Mazzaridd”- a wooden stick with a comb shaped top which shakes the branch without hurting the plant, and a somewhat more technological instrument called “Squotitore” a motor run stick with a clap which shakes the tree and makes olives fall- (still in full respect of the plant and its welfare as it is not an invasive procedure).
After a hard days work, the olives are transported to the local mill for the “molitura” in a cave like underground stone mill. “What strikes you the most,” observe Mimmo, “is the heady smell of all the different types of olives being milled, so mesmerising you can almost taste the flavours of the olive oil to come. It is a quite unique sensory experience. One I am glad we could share with our customers so they would see how much love and dedication goes into the making of our olive oil”.
It is often said “I wish I could bottle that experience or if only you could bottle it”, well we think the Rubini family managed to do just that and capture in this exceptional Extra Virgin the smells, the pride, the passion and the love for their land.

The rite of bread and olive oil- how to savour our oil to the max
There is a rite commonly practiced after milling the first oil (novello- newly milled, freshly milled):
have a slice of sapid rustic bread at the ready, preferably toasted or char grilled and splash it with generous helping of extra virgin novello .
the crusty slice absorbs the green ambrosia and it is filled with the intense flavours of the olive oil, unmistakably herbaceous, delicate acidity, lip-smackingly succulent.
It is the real Taste Test and we encourage you to take it! It won’t disappoint!
Terre the Puglia Extra Virgin Olive Oil has a sweet flavour with a slightly bitter fragrance of fresh grass for the first 3-4 months. We advise it, uncooked, with "bruschette", roast fish or "pinzimonio"- uncooked carrots, celery and cherry tomatoes to dip in our olive oil and balsamic.
As it ages it will be perfect on sauces, grilled meats and on any of all favourite dishes.

THE HARVEST POEM
this is a local poem written in dialect which describes the harvest and some of the local rituals.
When the time comes for the olive's harvest,
a great celebration brakes over the hills,
heard far and wide,it shakes the peace!
Bonfires lit at dawn, as far as the eye can see, sat side by side, everyone is ready for the harvest!
Thoroughly savoured
a morsel of home-made bread and
flame grilled olives prepare the spirit;
Branches shaken, olives dancing to the ground,
like hail from the sky.
Sheets at the feet of the trees, in an instant full.
